One down!

Well, I’m done with one of my knitting projects ) I seem to get in these little funks where I have a ton of projects going, but I don’t seem to be finishing any of them. I think I’m finally coming out of that!

So, here’s my scarf!

Merry Christmas, everyone!

I hope you had a great one. It was fantastic here. I have the greatest, sweetest, cutest kids ever. My daughter loved her Barbie and Barbie house. My son was so excited about his new T-Rex Mountain and dinosaurs. They enjoyed each others’ toys as much as their own, and they did such a wonderful job at sharing. My kids just have the sweetest spirits. It is such a blessing to me to see them and they way they interact. It humbles me and warms my heart more than I could ever even describe in words.

Now… on a totally different topic… I’ve never claimed to be the most enlightened and advanced person when it comes to avoiding materialism. I’m sure that blogthings has told me that more than once. So, keeping that in mind, look at what my in-laws bought me for Christmas. It is dreamy and has that wonderful new-purse-smell that I dream about! She jokingly told me that I now have a “spring” Coach to go with my “winter” one, lol. Only 2 more to go!

Yet another project!

Well, I am trying to get this project done as quickly as possible, because I’d love to give it to my mother-in-law for Christmas. I’m doing it in black alpaca, and I’m really excited about it. So far its still quite small though. I’ve only finished 15 rows, but in about 15 minutes worth of work.

So now I just need to turn this:

I have several friends who wanted to see what it looked like when knitting and purling, so I did a few stitches and recorded it. The quality isn’t perfect, but it’ll give you an idea )

I really feel like God is speaking to me on the topic of spending time with him vs. spending time for him. For the first time in my adult life, I am really active in serving at church. I have been leading several groups, in extra Bible studies, making meals for pregnant women, helping out wherever I can, working on Christian websites, etc. I am so happy to have a place where I am serving.

Still, I feel that God is trying to impress on me that I have begun cutting out my time with God, either through prayer or Bible study, in order to have time in my life for these other things. I’m becoming a bit of a Martha.

Some verses that have really been impressed on me:

Luke 10:41b “‘you are worried and upset about many things, but only one thing is needed. Mary has chosen what is better, and it will not be taken away from her.’”

Luke 9:28-29 “As he was praying, the appearance of his face changed, and his clothes became as bright as a flash of lightning”

and then as Christ’s experience relates to us

2 Corinthians 3:18 “We, who with unveiled faces all reflect the Lord’s glory, are being transformed into his likeness with ever-increasing glory, which comes from the Lord, who is Spirit.”

Romans 12:2 “Do not conform any longer to the pattern of this world, but be transformed by the renewing of your mind.”

I realize that I have not been doing a good job of balancing my time in relationship with God. I am thankful that he has gently reminded me of it before I went any further. The way for me to be renewed is by spending time with God, not just doing things. I need a balance.

Interestingly, I also see that I do this in my earthly relationships. I think I needed a good reminder that gifts of time are more important than gifts of service. I’m such a task-oriented person that I need to be shaken up and reminded that its not bad to be people-oriented.

God is so good to me ) I so adore the way that He disciplines. I hope that I am able to achieve the same with my children. He did not punish me or cause me to feel bad. He gently showed me my mistakes and in love I want to respond to his correction. Its so nice )

Movin’, movin’, movin!

I went ahead and moved my blog over here. I really wanted a change from Xanga, so this should be good!

I thought I’d go ahead and share my current project with you. Its not done yet. Its really close though. Its a scarf that I’m knitting on circular needles with some spare yarn that I had sitting around.

Cleaning Naturally

When I first started reading about all of the dangers of the harsh chemicals that I was using for cleaning, I was overwhelmed by all of the choices out there. It seemed like most of the recipes used all sorts of exotic ingredients, and I was afraid to invest in a bunch of supplies that would leave me with ineffective cleaners.

I scoured the internet looking for new ways to clean, and here’s a collection of some of my very favorite recipes! Several of these were given to me by my friend, Kym, so if you’re reading this, thank you! I’ve altered each of them a little bit, either in the way that I use them or the way that I mix them, so I hope everyone will all be able to benefit from my trial and error!

*You can find great spray bottles at the dollar store or at wholesalers like Sam’s Club.*

Everyday All-Purpose Cleaner
2 cups distilled or bottled water
1/2 cup vinegar
6-8 drops essential oil (tea tree, sweet orange, and lemon are all faves around here)

Although most people don’t realize it, ordinary household vinegar (5% solution white vinegar) kills 99 percent of bacteria, 82 percent of mold, and 80 percent of germs (viruses). It is a great all-purpose cleaner!

Combine all ingredients in large spray bottle. Gentle shake to blend before each use. If vinegar scent is too strong, try adding a few drops of chamomile, sweet orange, or lavender.

Creamy Peppermint Soft Scrubber
1 cup baking soda
1/4 cup Borax laundry booster
1 TBS Castille soap
5-10 drops peppermint essential oil (use less if pregnant)
*You can also use Peppermint scented castille soap instead*
1/4 cup water

Combine all ingredients in a glass jar. I used mason jars, but you could also recycle a mayo or similar jar. Fasten lid and shake very well. Pour onto surfaces to be cleaned (formica, tile, porcelain, granite, etc.) or onto washrag and watch grime and residue disappear with very little scrubbing effort! Rinse well with the hottest water you can stand – no need to polish fixtures afterwards. They will shine so nicely! If you notice it getting too thick after time, then you can add a little more water and shake it up again.

Lavender Blossom Glass & Window Cleaner
2 cups distilled or bottled water
1/2 cup vinegar
6-8 drops lavender essential oil

This is very similar to the all-purpose cleaner. I use them both for the same tasks. Just shake it up and add other essential oils or more lavender if you find the smell too strong.

Olive-Citrus Dusting Polish
1 Tablespoon olive oil
1?4 cup lemon juice or vinegar (lemon juice is much more fragrant, but they work equally well)
2-4 drops tangerine or sweet orange essential oil

Pour all ingredients into clean, recycled glass jar. Attach lid and gently swirl to blend ingredients. Dip soft cloth into mixture and polish to an old fashioned, healthy luster. I have also used this mixture by placing it in a spray bottle and spraying it onto the cloth or surface when its time to use it.

I ran out of this cleaner recently and didn’t feel like making up a new batch (total laziness on my part), so I used some of the store-bought furniture spray instead. It was so gross! I can’t believe that I used to use it all the time! It put all sorts of nasty fumes into the air and made our floors all slippery (from where the residue had fallen). I will never ever go back now!

Rosemary’s Residue-Removing Counter Cleanser
(use a hot water rinse with this to get gunk off of counters, especially in the bathroom with hair spray!)
1/2 cup distilled or bottled water
1/2 cup castile soap
4-6 drops rosemary essential oil (if you are pregnant, have high blood pressure, or epilepsy, use sweet orange or tangerine instead.

Combine all ingredients in spray bottle, gently swirl to blend, and spray directly onto surface. Wipe with a soft cloth, then rinse well with hot tap water and enjoy the shine!

Crescent Lasagna

Sauce
6 ounces tomato sauce or 6 ounces tomato paste with desired seasonings

Cheese filling
¼ cup grated parmesan cheese
1 cup ricotta cheese
1 egg

Crust
2 cans refrigerated crescent rolls, (8-oz.)
2 slices mozzarella cheese, (7×4-inch)
1 tablespoon milk (optional)

1. Heat oven to 375F. In small bowl, combine all cheese filling ingredients; blend well. Unroll one package of dough onto a cookie sheet. Press the dough into a rectangle, sealing all of the seams.

2. Spoon half of the tomato sauce to within 1 inch of the sides. Spoon cheese filling over tomato sauce; spoon remaining tomato sauce evenly over cheese mixture. Arrange mozzarella cheese slices over tomato sauce.

3. Place second roll of dough on top. Press 1″ of the sides together all around. Seal any seams. Brush with milk, if desired.

4. Bake at 375F. for 23 to 27 minutes or until deep golden brown.

*Meat eaters can brown 1/2 lb. pork sausage and 1/2 lb. ground beef and add it to the tomato sauce )

Baked Ziti

Baked Ziti

1 quart prepared spaghetti sauce, divided
1 lb. ricotta cheese
½ cup parmesan cheese
3 cups mozzarella cheese, shredded, divided
1 lb. ziti pasta, slightly under cooked and drained

Preheat oven to 375 degrees F. Lightly grease 9×13 or 2- 8 inch square baking pans or 3- 8×6 rectangular pans. (I usually freeze one or two.)

In a large bowl, completely combine 2 cups of sauce, ricotta, parmesan, and 1 cup mozzarella. Stir in ziti.

Spread 1 cup of sauce in bottom of your pan. Spread ziti mixure on top of sauce. Spread last cup of sauce on top of ziti mixture. Sprinkle top with rest of mozzarella.

Bake for 25 minutes or until cheese is bubbly and slightly brown around the edges.

This recipe freezes wonderfully! After cooling the ziti pans, either cover them with foil, or use Pyrex pans with lids and stick the lid on there. You can then pop them in the freezer. When you decide to cook them, you can either cook them frozen (this will increase cooking time) or defrost them and then cook them for the same time as the original recipe called for. If your ziti dries out, add a little extra sauce to add some moisture. I have also microwaved the ziti, and it still tastes good!

I Can Run!!!

“I want to run a marathon.”

I could hardly even believe myself when the words came out of my mouth. I had just given birth a few months earlier, and I was weighing in at my highest weight ever. I was a size 12/14, and I felt miserable. The most I ever ran was when the phone rang, and even then I was out of breath.

As soon as the words came out of my mouth, I realized that I needed to take action. Some people would’ve laced up their shoes and bolted out of the door, but not me. I researched. I am an excellent researcher – as a matter of fact, I am a far better researcher than runner, so I dug right in.

Within a few days, I realized that I needed a plan. I studied all of them, looked for reviews online, and planned out when I could run my first race, a 5k. After a short amount of time, I decided on Cool Running’s Couch-to-5K Program. It looked doable enough. I only had to start running 60-seconds at a time, and within 9 weeks I’d be a bonafide runner. I would start the next day.

After day 1, I was sore, tired, and had barely made it through my intervals, but I survived, and for that I felt like I was on top of the world! The feeling of accomplishment was amazing! I wrote the following in my running journal:

“Today was my first day in my new training. It definitely got me sweating, and I’m so proud of myself for getting out and running. I already feel better. The headache that I woke up with is gone.”

I wondered how I could run 3.1 miles in just 9 weeks, but I trusted that I would get there if I tried. My mom decided to join me, and we set off on our latest adventure.

Throughout that 9 weeks, I developed some knee problems and my mother’s shin splints started acting up. We bought real running shoes, recommended to us by running store experts, not just kids who work at the mall. That solved our issues. With our injuries behind us, we were ready for our first race!

Just as promised, we ran the entire 5K on race day, and it was one of the best experiences of my life. By the end of the 9 weeks, I had lost a few sizes, had noticable definition in my legs, and had so much more energy. I felt fit for the first time since my skateboarding days in college ;)

Now, almost 4 years later, I am a healthy size 0 (as you can probably assume, I have a very small frame, which is why a 12/14 was so unhealthy for me). I give running the full credit. Since I have started running, I have become a much healthier person in general. I eat much healthier. Our lives are more active in general. I vary my workouts so that I’;m not just running, but also skiing, bellydancing, practicing yoga, hiking, etc, etc.

There is no magic pill for weight loss or health, but I was able to change my life, one step at a time. Those first few months of running were challenging, but now its second-nature. Running is my release, my meditation/prayer time, my opportunity to relax… Its wonderful, and I invite you to try it.

I hope to run my first marathon next Summer/Fall. I have already started to amp up my training, and I promise to keep you updated!
