  • Celebrate!

Today is a day of celebration! My mom, who spent almost the entire year last year trying to get her National Board certification (she’s a teacher) just found out that she passed! Yay! That means she’ll get a multi-year bonus that totals $100,000, plus a nice raise. I’m so happy for her! She poured everything she had into the portfolio, and I couldn’t be happier for her!

Vegetarian life is still going very well. A fellow GCMer just shared this link for the vegan lunchbox, and I’m now dreaming of all of the yummy lunches that I could have! MMmmm.

I’m really psyched because my parents are coming next week. I haven’t seen them since July and these multi-month spells in-between our visits are really tough. We used to live less than a mile apart, and although I know that it is really good for us to be totally on our own… its sad too, y’know?

So we’re going skiing/snowboarding with my parents when they come. They’ve never done anys snow sports, so I’m sure it’ll be a blast. Wait, I think my dad said he went skiing once when he was in the army (~30 years ago), but he doesn’t remember much except for drinking a lot of beer before he went on the mountain, LOL. So, I think they both count as newbies. Joe went snowboarding on Wednesday (the first day Winter Park was open) and said that the snow was amazing, so I’m really looking forward to it. I even dreamed about skiing last night, lol.

I made ultimate vegetarian chili last night, although I had some spare Boca crumbles, so I threw them in instead of the bulgur. It was really yummy. I have a bunch of leftover hamburger helpers thanks to the grocery game, so I may try using some of the crumbles in there as well. I think it’d be pretty good. Has anyone tried it?

Well, I’m off to clean and do laundry. I know, I know… I have such a glamorous life!
